Summer dumplings

If you associate dumplings with winter - the sort of doughy, heavy food that you would only want to eat after braving freezing rain and whipping wind on the way home from work, or perhaps after a long snowshoe trek through the Cascades - think again!

In the summer version of my Russian Dumplings class, which will meet at The Pantry on July 18-19, we will make lighter versions of both sweet and savory dumplings that are perfect for warm summer days. We will take advantage of seasonal ingredients - sour cherries! fresh herbs! - as well as throw in some year-round staples like potatoes and caramelized onions, drizzling everything with luscious melted butter or cooling sour cream. There may even be a sprinkling of crumbled bacon thrown in!
